The grapes were machine harvested in the cool evening to preserve flavour and minimise phenolics. Once settled, the clear juice was cold fermented with a selected aromatic yeast strain to preserve the fruit’s intense aromatic flavours. The ferment was stopped with a small amount of residual sugar by chilling, to balance out the acidity. The aromas are of freshly scented citrus fruit and green apple with hints of rose petal and watermelon. On the palate it is light bodied with a delicate texture. The subtle citrus and floral flavours linger in the long, refreshing finish.
