Glorious sweet and concentrated Riesling from grapes infected by the Noble Rot, this is truly the nectar of the Gods. The first Botrytis wine made by Ian Hollick was in 1985 since when he has developed a real reputation for this style. This is made entirely from Coonawarra Riesling grown in Ian's Wilgha Vineyard, the grapes were allowed to stay on the vine for an extended period which encouraged the developement of Botrytis and also concentrated the sugars and flavours in the grapes. The wine is pale straw in colour that will develop into golden hues with age. The primary aromas of Riesling - apple blossom and orange peel - are overlayed by notes of marmalade and dried apricot. In the mouth this is luscious and intense with honey, citrus and marmalade flavours that finish with a cleansing clip of acidity. Ideally served with pate, fresh fruits or even a ripe brie. Glorious.
