"Vendanges Tardives" translates as late harvested, and the grapes were left on the vine for several weeks after the official starting date of the harvest and they were picked only when ultra ripe. Although already rich and concentrated, further complexity was gained when Botrytis Cinerea or Noble Rot developed on a percentage of the grapes.

The grapes were placed in pneumatic presses by gravity and gently pressed for 3-6 hours to preserve maximum varietal flavours and aromas. The juice was then fermented in temperature controlled stainless steel tanks, followed by 4 months ageing on its lees in large, old oak vats for micro-aeration. The residual sugar level is 106g/l, but the complexity and the lip-smacking acidity keep it fresh.
