The Doctors' Riesling is made from grapes that were harvested early with lower levels of sugars. The Riesling grapes were gently pressed, cold settled and given a cool, slow fermentation which was arrested at around 9% alcohol and 28 g/l of residual sugar. The final decision on when to stop the wine fermentation was based upon the acid/sugar balance.
