For some years now Prosecco has dominated the sparkling wine market. But this year, we have seen a surge in demand for more traditional sparkling wines that don't have the sweeter finish that Prosecco generally offers. Here we have put together a couple of different sparkling wines, all made by the Champagne method, that are both Brut and fruity. Great wines that offer refinement, elegance and class.

Cremant de Bourgogne Blanc de Blancs - Domaine du Bicheron Brut N/V
This pure Chardonnay Champagne Method sparkling wine was born in the Maconais vineyards and was aged on its lees in bottle for 18 months before disgorgement. It has a wonderful freshness and a good zesty acidity bringing the palate to life and thus it is the perfect aperitif. It will also go well with certain foods such as oysters or a plate of fruits de mer. Fantastic fizz.
Cava Pares Balta - Brut N/V - Vegan and Organic
Our good friends at Pares Balta are making some of the most wonderful Cava you can imagine. This is their flagship wine which has been made from Parellada, Macabeo and Xarel.lo grapes. It has a medley of white peach, apple, pear, melon and lime fruit on the nose, with a gentle creamy smokiness from the time this Cava spent on its lees. Rich flavours of apple, honeydew, peach and mineral notes on its fruit-forward and nicely balanced palate with a clean, tropical fruit infused finish.
