The soil of Les Caillerets is predominantly stoney and shallow. Up at the top of the slope there are outcrops of bare rock and the soil is mainly white marl. This will give the wine weight. Lower down, there is more calcareous surface soil, producing a wine of steely elegance. A blend of the two makes the best wine.
Les Caillerets requires a year or two more than most of the other premiers crus to come round, but then, as one might expect, it will hold up longer. Domaine Fontaine-Gagnard's bottling is no exception. The most successful vintages are not at their apogee until they are eight years old and are still more than satisfactory at age 12 or even 15.
