Sans or "without" Barrique - the 225 litre new oak barrels used in Bordeaux - is, as you'd expect, an unoaked Chardonnay from Bouchard Finlayson. Chardonnay without a dusting of vanilla and spice from oak can sometimes be rather neutral and unexciting. The depth and complexity achieved here is achieved firstly through excellent fruit quality and secondly by leaving the wine on its primary lees where it absorbs extra character through a process called yeast autolysis.

As is the case in Chablis, the home of the world's most famous unoaked Chardonnay, the richness of this Bouchard Finlayson Sans Barrique stems from heavy, clay-based soils which allow the wines to remain unirrigated and which contribute to the influence of the terroir upon this wine.
