Paco Molina Cava Brut is pale yellow in colour, it has medium intensity nose of white fruits - pear and apple - together with floral notes and a slight hint of creaminess. On the palate it is fresh and lively with predominant fruit flavours, and it culminates in a light, soft and extremely pleasant finish. Paco Molina is made by the Cusiné family of Parés Baltà fame, and this delightful organic Cava is produced using the traditional method. It is a blend of three traditional Penedés grape varieties: Xarel.lo, Macabeo and Parellada. The first gives a great floral freshness to the wine; the second adds a distinctive fruity character; and the last adds body and structure. Initial fermentation took place in stainless steel tanks at 16°C to preserve all of the fresh fruit qualities. Secondary fermentation took place in the bottle, where it was also aged for around 12 months.
