Abbruzzo Pecorino - Costantini Vini
The Pecorino Grape has made its home in the Abruzzo and this great example shows exactly why. The nose abounds with floral scents that combine perfectly with white fruit aromas and faint hints of pineapple. On the palate it is bold, structured and underpinned with minerality that makes it such a good food wine. It is wonderful when paired with fish or seafood dishes but also works exceptionally well with pork dishes.

Harvested by hand at full maturity to protect the quality of the grapes, they were then softly pressed to extract only the finest juice and the must was then left to rest for some hours at a cold temperature. It was then raised to 16 to18 degrees to allow the alcoholic fermentation to take place. Following on it was aged in stainless steel tanks while it was stabilised before bottling.
Best served cool at around 10-12 degrees C.
