Paul Cluver Chardonnay


Paul Cluver Chardonnay has lots of buttered toast or brioche on the nose with some bright lemon and grapefruit citrus aspects, too. Tangerine fruit and blossom aromas are apparent, with hints of vanilla pod and nutty, flaked almonds. These characteristics follow through onto the palate. The fine, fresh acidity and adds poise and focus to the wine and balances out the deft use of oak. Everything you want from a well made, oaked Chardonnay.

Paul Cluver ferments his Chardonnay with wild yeasts in a selection of French oak barrels: 20% are new, the rest are second, third and fourth fill. A degree of lees stirring is done and the wine remained on the lees for a total of nine months. 40% of the wine went through malolactic fermentation to add a gentle creaminess without losing its balance with the freshness and acidity.
