Hollick Shiraz displays that rare combination of power and elegance. After aromas of blueberry and cedar on the nose, there is an abundance of sweet Shiraz fruit flavours on the palate, but the wine retains a good balance and surprisingly supple tannins. Complex flavours and aromas of honeysuckle, passionfruit skins and roses, typical of the Wrattonbully wine region, underline the complexity of the wine and are in harmony with the ripe, primary black fruits of the Shiraz variety.

The rolling hills and stony soil of the Hollick vineyard in Wrattonbully is proving to be a fantastic site for top quality Shiraz. Planted in 1998, it boasts similar, shallow Terra Rossa soils over limestone to Coonawarra, but it is marginally warmer which results in slightly earlier ripening. This Wrattonbully vineyard consistently produces low yields of fruit with intense flavour and colour.

Good rainfall ensured that the soils were primed to provide optimal growing conditions in 2013. However, winds hampered flowering and resulted in reduced fruit production. The growing season was dry and the grapes ripened earlier than normal but developed a fantastic depth of colour and flavour, along with rich tannins and bright, natural acidity.

The winemaking team worked carefully to retain the wonderful flavours created in the vineyard and, after fermentation and maturation, a critical selection of the most outstanding barrels was made to determine the final wine. Typically, the best barrels were filled with wine made from fruit sourced from the top of the slope. Here, the shallow soils ensured that the vines struggled to produce crops of little more than one tonne per acre and they delivered some stunning flavours. Eighteen months maturation in both French and American wood provides welcome oak notes to compliment the bold fruit flavours and lively acidity of this Hollick Shiraz.
