The vineyards are situated in the Elgin Valley where the south east exposure and the Tukulu soils are ideal for this Catherine Marshall Sauvignon Blanc, ensuring freshness, classic fruit nuances and minerality. The canopies were strictly controlled to maximise the fruit to leaf ratio - a critical part of attaining balanced and intense fruit flavours. After harvesting, the fruit was pressed then fermented using a selected yeast strain that is ideal for Sauvignon Blanc. It was then stored on its lees for 6 months, developing further richness and mid-palate tones.
