Darling Cellars Cinful Cinsault is made in an off-dry style, which adds great richness and depth to the palate. It has lovely pomegranate, candyfloss and liquorice aromas that rise from the glass to meet you on the nose and these follow through onto the palate. The wine is soft, fruity and fresh.

The recent demarcation of the Darling district has led to a focus at Darling Cellars on wines that are terroir and variety specific. The cool and temperate West Coast climate lends itself to a different micro and mesoclimate which, along with the different types of soil, lead to unique grapes, which are crafted into unique wines. Having 99% of all vineyards dry farmed and almost the same percentage as bush vines, this is as close to what nature intended for grapes to be as one can get.

After a good, long, wet winter, Darling Cellars experienced very even bud-break. A long cool growing season allowed the Cinsault grapes to mature beautifully while retaining their natural acidity. All of the grapes for the Darling Cellars Cinful Cinsault were hand harvested and de-stemmed prior to fermentation on their skins for 15 days at 20-25°C. A portion of the wine spent 8-12 months in contact with some oak to add further layers of complexity.
