Domaine Alain Chavy Puligny-Montrachet 2015
Domaine Alain Chavy Puligny-Montrachet 2015 sees 25% new oak and has a lovely bouquet with light scents of green apple and pear. The palate is nicely balanced on the entry with a touch of bitter lemon and pink grapefruit, although the oak needs a little time to fully integrate. Very appealing now, but allow this 2-3 years in bottle to settle down and show at its best.

Alain Chavy prefers a restrained style of Puligny-Montrachet with ripe, but never over-ripe, fruit balanced by crisp acidity. He wants his wines to be able to age gracefully.
No weed killers are used in the vineyard but the rows are ploughed regularly. Alain has abandoned the use of anti-botrytis sprays as more meticulous work in the vineyard makes them unnecessary. All of the grapes are harvested by hand. The grapes are pressed and fermented in barrel and Alain practices minimal battonage. The wines are bottled 16 months after harvest.
