Les Vignes Rondes is at the heart of Monthélie's premier cru vineyards and is set on the south and east-facing slopes of the famous Côte De Beaune. The soils are well drained and have a high content of limestone, bringing a certain minerality to the wines the vineyards there produce. Their south-easterly aspect means the grapes make the most of the morning sunlight, which helps them to ripen fully in the relatively cool Burgundian climate. This example from Domaine Pascal Prunier-Bonheur was aged for 15 months in barrels, with a proportion of 20% new oak.
