Hollick Cabernet Sauvignon is vibrant, inky-deep magenta. Lifted and powerful aromas of brambles, tobacco, and blueberry with hints of vanilla. It is an intense wine with plenty of ripe, dark berry fruit flavours. Chalky tannins layered with mulberry, olive and dark plum compote give elegance and finesse.

The fruit for the Hollick Cabernet Sauvignon is selected from old vines growing in the Wilgha and Neilson's Block vineyards at the cooler, southern end of Coonawarra. Located on the famous terra rossa soil, these vineyards were originally planted by Ian and Wendy Hollick in the 1970s and early 1980s.

In the winery, the grapes were handled carefully to retain the intense fruit flavours developed in the vineyard. Partial barrel fermentation followed by 20 months maturation in French oak (30% of which was new) gives the Hollick Cabernet Sauvignon an elegant and long finish. Good to go now, but with 15 years ahead of it if well cellared.

The 2009 vintage was chosen to represent the best of Australian wines and was served to US President Barack Obama at a dinner in Canberra in 2011. The 2012 Hollick Cabernet Sauvignon is every bit as good, and it’s just waiting for another presidential visit.
