Hollick Wilgha Shiraz is dense crimson with purple hues at the rim, showing the typical spice and white pepper aroma and flavour of cool climate Shiraz. A complex arrangement of floral notes with spicy fruit, toasty oak characters, lifted sweet plums, black berries, hints of prunes and liquorice on the nose. A rich and vibrant wine with dark plum, blackcurrant and dark chocolate flavours. Dark and dense, with a chewy, tobacco and cocoa flavoured mid palate. Balanced and supple, with sweet tannins leading into a long and lingering finish.

The Hollick Wilgha vineyard is located in the southwestern corner of the famed cigar-shaped strip of terra rossa soil in Coonawarra and it was first planted in 1975. Hollick Wines has been making a Shiraz from this property since 1988. The 2010 Hollick Wilgha Shiraz is a selection of the finest fruit from dry-grown, low yielding vines on the shallow terra rossa soil.

Good winter and spring rainfall recharged the soils and provided near optimal growing conditions for the 2010 vintage. The resultant healthy canopies produced full flavoured and coloured fruit. The Hollick Wilgha Shiraz was harvested in mid-March and showed wonderful fruit flavours from the old vines.

The grapes were harvested and transported directly to the winery where the fruit underwent a controlled cold soak to achieve maximum colour and flavour extraction. Fermentation was conducted in 5 tonne, open top fermenters with regular hand plunging of the cap. To promote the integration of fruit and oak flavours, the wine was transferred to French oak barriques to complete its fermentation and for 18 months of maturation. Only the best of these barrels were then selected for final blending and subsequent bottling of the Wilgha Shiraz.
