Irpinia Rosso "Sanserino" 2013 Tenuta Cavalier Pepe

Sanserino is a blend of 70% Aglianico and 30% Sangiovese grown in the hills around Avellino some 40/50 kilometers from Naples. In the glass it has an attractive ruby red colour, a nose redolent of violets and cherries which are also found on the palate together with ripe tannins and a fresh and vibrant acidity. This is really at home when you have it with pasta dishes or even a fine roast leg of lamb.

After the grapes have been hand picked and then sorted to exclude anything but the finest berries, they are destalked and then undergo a cold maceration to extract colour without the heavy tannins. Fermentation takes place at relatively low temperature with the free-run juice regularly pumped back over the skins to extract more and more colore and aromas. It was matured only in stainless steel tanks so there is no oak flavour interwoven and after 10 months there it was bottled and left to rest in bottle for a minimum of 6 months
