Pares Balta Calcari is quite pale in colour with tinges of green; aromas of white fruit mingle with more exotic notes of grapefruit, banana and rose. On the palate it is extremely fresh yet surprisingly ample and silky, with lively pear, lemon, floral and mineral flavours enlivened by tangy acidity.

The Xarel.lo grape (pronounced cha-rell-oh) is native to Penedés and it is one of the three grape varieties you've possibly never heard of that are used to make Cava. What we can't understand is why it's not used more widely for making still wines, given the quality of this fantastic example from Parés Baltà. Maybe the Penedés folk just want to keep it to themselves! The grapes destined for Parés Baltà Calcari were fermented in stainless steel, and the wine spent four months on its lees to add a creamy texture to the palate. The result is one of the finest seafood wines we have tasted in a long time.
