Paul Cluver Dry Encounter Riesling shows ripe lime, blossom, beeswax, toast and honey notes on the nose. The palate is crisp and clean but has more weight than one normally would expect thanks to fleeting impression of a hint of sweetness. Like with so many great Rieslings, there is a great interplay between the touch of naturally retained residual sugar and the acidity. Generally regarded as restrained, it displays Riesling's typical nervosité or "nervousness". The mineral core, which is linked to the shale rich soils in which the Riesling vines grow, astounds. It is the reason for the wine's structure and the lingering, chalky finish. Perfect hot weather wine - very refreshing.

As is common when making Riesling, and the Paul Cluver Dry Encounter is no exception, the juice is allowed some skin contact prior to fermentation to extract flavour and to reduce the overall acidity. Rather more unusually, fermentation is stopped on some of the wine, generally the batches with the highest acidity. The wine with lower sugar levels is left on its lees to add a creamy texture to the wine. The two differently made Rieslings are then blended and bottled.
