Tasting wise, it has both tropical and floral notes with citrus peels and lemon verbena dominating with a burst of juniper. It’s quite heady and sophisticated. To serve it they recommend a slice of either grapefruit or lime and a good tonic water. It’s also good with old fashioned cloudy lemonade!

Peakys Distillery was started back in 2016 before which Zara was a food studies teacher and previous to that a chef. The base alcohol comes from High Peak water, essential to its purity with cane sugar and jaggery which is then fermented and distilled before the botanicals are added. Her philosophy for the infusion is less is more as when distilled the flavours become very concentrated. When infused, the liquid is re-distilled in a 25 litre still achieving around 92 degrees alcohol which is then let down to its 44% release volume with distilled water. This is a true craft product with no sulphites added and production limited to between 30 to 50 bottles per month.
