The palate is lifted by a nice level of acidity which leads into a finish of zesty lime and lemon peel and lime.
Highness Eden Valley Riesling is extremely enjoyable now while it's young but it will drink brilliantly in ten or more years, so store some bottles in the cellar.

Rolf Binder Eden Valley Riesling is made of fruit from two Eden Valley vineyards, one on the western side and a one from a select grower from the township.
Thanks to the warm days and cool nights typical of the higher altitudes of this sub-region of the Barossa, the grapes ripen with with intense flavours while retaining a pleasing acidity.
Each vintage has a different growing season and this greatly influences not just flavours but yields from the vineyards.
During the winter of 2017, Rolf Binder experienced sufficient rain to fill the soil profile and provide enough moisture for the vines.
This resulted in a higher yield than previous years and grapes ripened evenly after a mild summer, resulting in aromatic and vibrant wines.
After harvesting in early March, batches of the fruit were processed and fermented separately at the winery, before blending of the wines, followed by bottling in late April.
