The grapes were placed in pneumatic presses by gravity and gently pressed for 3-6 hours to preserve maximum varietal flavours and aromas. The juice was then fermented in temperature controlled stainless steel tanks, followed by 4 months ageing on its lees in large, old oak vats for micro-aeration. The residual sugar level is 106g/l, but the complexity and the lip-smacking acidity keep it fresh.
