The main grape harvest of the 2016 vintage took place in April and was very straightforward with no interruptions. For the Stanley Estates Noble Harvest Sauvignon Blanc, the grapes were picked later and rain in May led to great development of Botrytis cinerea or noble rot. A window of fine weather allowed the botrytis to dehydrate and concentrate the juice of the fruit, developing a lip-smacking complexity and sweetness. The grapes were hand harvested and taken in bins to the winery.

The Sauvignon Blanc fruit was de-stemmed and pressed, where it stayed for a 24 hour period with the juice being reintroduced to the press to extract more flavour and complexity from the grapes. The fruit was then pressed a second time and afterwards was settled in a tank, chilled, then racked into stainless steel tanks where it went through a slow, controlled fermentation using specialised yeasts for high sugar content musts.
