Wooing Tree Pinot Noir


Wooing Tree Pinot Noir is produced from ripe, hand picked fruit, gentle winemaking and maturation in French oak have resulted in a complex and powerful wine, with aromas of ripe cherries, raspberries and Black Doris plums, a rich and silky smooth palate with fine, grainy tannins and gentle oak spice to match the fruit. Excellent value, drinking fantastically well now and will develop and cellar for several years.

Wooing Tree ferments a small amount of the handpicked grapes as whole bunches to give a brighter colour and finer tannins. All of the grapes were cold soaked for 5 to 7 days, and the cap was hand plunged 3 times a day at the peak of fermentation. The wine was aged in 100% French oak for 10 months, a third of the wood was new. Malolactic fermentation took place in barrel and there was minimal filtering prior to bottling.
