Pares Balta Blanc De Pacs has ripe, white orchard fruits on the nose that are echoed on the palate, tempered by pithy, zesty lemon acidity and a chalky, almost saline minerality. Parés Baltà Blanc De Pacs is made from the Cava grapes Parellada, Xarel.lo and Macabeo, grown in the Hisenda Miret and Parés Baltà vineyards at altitudes of 315m and 230m respectively. The differing terroirs of these two vineyards provide both a richness of fruit and a bracing minerality. 55% of the blend is Parellada from 51 year old vines, giving Blanc De Pacs great complexity, intensity of fruit and a crunchy acidity that really refreshes the palate. Seven months in older oak rounds off the fruit and adds an uncharacteristic weight to a crisp, fresh white wine.

A great food wine, according to team leader Olivier Marie, who said: "Aromatic, with slightly floral expression, Muscat-like rose petal and lychee fruit with an exotic finish. Light body but nice fresh acidity." Charles Van Wyk of FJB Collection agreed, enjoying its "lovely mouthfeel and lingering finish", while team leader Hamish Anderson focused on the fragrance, saying: "Very perfumed, fresh and floral, this is tight, bright and good. Exotic but well balanced."
